How do I remove an employee from my Dashboard?

You would have to actually remove them from the data in TekMetric. OktoRocket pull techs and advisors straight from your data in TekMetric based on who is assigned to tickets, those employees are just informational based on the possible history of tickets. They do not affect your numbers or data other than existing for historical purposes.
